Celtic Foodstyles | Traditional Scottish Tablet

HP David Crawford remembers his mother, Elizabeth Harrison Crawford, making good old Scottish Tablet, which was always a great surprise to find a tray like this waiting for him and his siblings upon arriving home feom school. 😀

Ingredients:

1 Tin of Condensed Milk

2lb of sugar

large knob of butter

1 cup of milk

Optional: Vanilla or Whisky can be added towards the end

You will also need:

Baking Tray, lightly greased with butter

Heavy bottom pan

Hand Whisk/Wooden spoon

Directions:

Add the sugar, milk & butter to the pan, heat slowly until it all comes together and butter melts. Then add the tin of condensed milk and bring the heat up slowly until mixture is boiling (Take care as it can get very very hot!! and does blister if you get splattered – believe it 🙂 !!)

Once mix is boiling turn down but keep mix on a steady “bubble” stirring constantly (I use a whisk as I have arthritis in my hands and find that easier than using wooden spoon, but you will find your own comfortable way of doing it!) It usually takes about 15-20 minutes and the mix will turn a golden brown colour, and when it starts to feel grainy against the side of the pan it’s ready to pour into the baking tray.

Leave to cool for around 10 minutes and then use a heavy sharp knife to cut through the mix into the required size you want. Leave to cool thoroughly and cut through the mix again to separate fully.

Eat and enjoy! Its 100% better than the shop bought stuff.
