Vegan Foodstyles: Creating Snacks With Nutritional Yeast

“Cheese” Biscuits

“Cheese” Biscuits

Ingredients:

  • 1-1/2 cups Blanched Almond Flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, cubed
  • 3 tablespoons Anthony’s Oat Fiber
  • 1/3 cup Nutritional Yeast
  • 1 egg

Instructions:

  1. Preheat oven to 350° Fahrenheit and grease a baking sheet.
  2. In a mixing bowl, mix together the almond flour, salt, and baking soda.
  3. Cut in butter until coarse crumbs are formed.
  4. Add oat fiber, nutritional yeast, and egg and mix well.
  5. Pat dough out on an almond-floured counter 1/2″ thick.
  6. Cut into rounds with a biscuit cutter or round cookie cutter.
  7. Transfer to prepared baking sheet.
  8. Bake for 15 minutes.

 

Vegan “Cheese”

Vegan Cheddar Cheese

Ingredients:

  • ¼ cup coconut butter
  • ⅓ cup coconut milk
  • ½ cup Nutritional Yeast
  • ⅛ teaspoon Citric Acid
  • ⅛ teaspoon garlic powder
  • ⅓ teaspoon Xanthan Gum
  • ¼ teaspoon Ground Turmeric
  • ⅓ teaspoon salt

Instructions:

  1. In a food processor, combine all ingredients.
  2. Process until very smooth and combined.
  3. Transfer to a small square container lined with plastic wrap and freeze until set.
  4. Slice or grate as desired.
