Celtic Foodstyles | Traditional Scottish Tablet

HP David Crawford remembers his mother, Elizabeth Harrison Crawford, making good old Scottish Tablet, which was always a great surprise to find a tray like this waiting for him and his siblings upon arriving home feom school. 😀
Ingredients:
1 Tin of Condensed Milk
2lb of sugar
large knob of butter
1 cup of milk
Optional: Vanilla or Whisky can be added towards the end
You will also need:
Baking Tray, lightly greased with butter
Heavy bottom pan
Hand Whisk/Wooden spoon
Directions:
Add the sugar, milk & butter to the pan, heat slowly until it all comes together and butter melts. Then add the tin of condensed milk and bring the heat up slowly until mixture is boiling (Take care as it can get very very hot!! and does blister if you get splattered – believe it 🙂 !!)
Once mix is boiling turn down but keep mix on a steady “bubble” stirring constantly (I use a whisk as I have arthritis in my hands and find that easier than using wooden spoon, but you will find your own comfortable way of doing it!) It usually takes about 15-20 minutes and the mix will turn a golden brown colour, and when it starts to feel grainy against the side of the pan it’s ready to pour into the baking tray.

Leave to cool for around 10 minutes and then use a heavy sharp knife to cut through the mix into the required size you want. Leave to cool thoroughly and cut through the mix again to separate fully.
Eat and enjoy! Its 100% better than the shop bought stuff.

Things are on the upswing today. This beautiful card reminds us that eventually that caterpillar gets its wings and transforms into a butterfly. Indeed, the recovery process which we have been discussing in recent months is well and truly underway.
All too often, people tend to view the 10 of Swords in a negative, stressful light, when, in fact, it is a reminder that hat goes down will rise up once again. Consider this the dawn of a new day, one where you can finally feel that you are putting the last seven years behind you. It may be a small light appearing, but soon, very soon, the new you will emerge for all to see.

Arachnophobia alert – next day’s has a big one
Living in Hawai’i, perceived paradise, we find it has several insects and spiders which have been introduced. Giant centipedes and scorpions have also hitchhiked on cargo to these islands.
One which is common in Australia is the Huntsman spider. People call them cane spiders, yet they got here on banana plants.
Tomorrow’s post features one Huntsman found in the carport. I regularly remove all sizes of them from my house. The spaces under the doors are not tight enough to keep them out.
So, if you are bugged by spiders, skip tomorrow’s post. There’s a Void Moon of Course and the data is at the top of the image. Hold your hand over the lower 2/3rds of the image and you’ll not see it.
