Vegetarian Siu Mai Recipe – Pham Fatale

This is my interpretation of vegetarian siu mai. The Asian dumplings are often filled with meat, so this is my attempt to create a toothsome, equally flavorful appetizer without meat. To do so, I prepared and filled the siu mai pockets with bean curd, jicama, shiitake, wood ear mushrooms, green onions, rice wine, soy sauce and sesame oil.Shaping dumplings with a vegetarian filling while preventing them from collapsing once they were steamed was a bit challenging. I used silicon mini muffin liners to avoid a possible culinary disaster and keep them appealing. Sometimes, thinking outside the box can be a life-saver for the home cook that I am!

Vegetarian Lentil and Chickpea Meatballs with Lemon Pesto Recipe on Food52

I love meatballs of all kinds, and these are one my favorites. They are really healthy, but you wouldn’t know it when you eat them. It’s perfect for summer when I don’t want to have the stove on a long time and heat up the kitchen. The lemon pesto is great on all sorts of other things as well, and I like it as a dipping sauce for veggies in summer. A nice hit of citrus really brightens up the meatballs too.

Swiss Chard and Lemon Ricotta Pasta

This is an easy, last minute dinner since you might have many of the ingredients on hand. If you don’t have any swiss chard, kale, spinach and arugula also work great. If you use kale, I recommend removing the tough central stem. If you use either arugula or baby spinach leaves, you don’t need to precook them at all; just toss them in at the end. The warmth of the pasta will sufficiently wilt them.

Recipe — Salmon, Quinoa and Vegie Rice Paper Rolls

SALMON-EGGROLLS

Roll up for this low-cal, low-fat and gluten-free lunch!

Ingredients:

  • 110g (3/4 cup) cooked quinoa (see tip)
  • 1 teaspoon salt-reduced gluten-free tamari, plus extra, to serve
  • 6 round 20cm rice paper wrappers
  • 95g can smoked boneless and skinless salmon, drained, flaked
  • 100g snow peas, trimmed, shredded
  • 1/2 red capsicum, deseeded, thinly sliced
  • 1 carrot, peeled, cut into long thin matchsticks
  • 12 mint leaves

Directions:

  1. Step 1

    Place the quinoa in a bowl with the tamari and toss to combine.

  2. Step 2

    Soak a rice paper wrapper in hot water for 10-20 seconds. Transfer to a clean tea towel to absorb excess water. Place a little of the quinoa in the middle of the rice paper. Top with one-sixth of the salmon, snow pea, capsicum, carrot and 2 of the mint leaves.

  3. Step 3

    Roll up to enclose the filling. Place the roll under a slightly damp cloth (to prevent drying out). Continue with remaining rice paper and fillings, placing rolls under damp cloth.

  4. Step 4

    Serve with extra tamari, if desired.

The Cake of Three (Dolce del Tre) Recipe on Food52

The recipe for this Tuscan cake is based on a ratio of weight (cups and ounces are given too, though you can see it’s a lot easier to remember in grams!). It’s an old-fashioned recipe that I found in a cookbook by Claudia Spargi on the cuisine of Tuscany’s Maremma region. It makes a cake that is springy, moist and delicately flavored—the kind of cake Italians would call a “breakfast cake” and the perfect blank canvas, too, for those who want to play around with adding more to it. Traditional Italian favorites might be lemon or orange zest, vanilla extract, a splash of rum or sambuca, or chopped nuts, chocolate, or dried fruit. A layer of sliced apples or pears over the top would be delicious, too. The options are pretty much endless. It keeps very well, wrapped well in plastic wrap. Leave as is or dust with confectioners’ sugar.

Vanilla Blueberry Tart | One Green Planet

Holy walnuts, this is delicious. The filling is basically just an awesome blueberry-banana smoothie and the crust is walnuts and dates. You’re gonna love my nuts (or be disturbed by my grotesque and obscure sense of humour). In any case, you actually will love this recipe, which includes nuts. Owned by me. Making them my nuts. So you will love my nuts. HAH.

Recipe ~ Thin Mint-Oreo Bailey’s Irish Cream Milkshake

4 scoops vanilla ice cream
100ml (about 3 oz) of Bailey’s Mint Irish Cream (if you are more of a lush than me…add more)
4 Thin Mint cookies
4 Double Stuffed Oreos
Milk to thin (this will depend on your preference for thickness of shake. I like a thinner one so that I don’t make that face where your cheeks go all the way in when you suck through the straw because it’s so thick you have to use all you got to suck it up the straw)

Add to a blender ice cream, booze, cookies, and a splash of milk.

Turn it on low at first and then build up speed. Add milk as you need to thin it out.

Pour into a glass. Top with whipped cream and more cookies if desired. Sit on your butt while drinking it. Eat some chocolate.

Recipe — Amazing Poached Eggs!

Here’s How To Make The Most Amazing Poached Egg Dish That You Will Ever Taste

Serves: One egg per person

Ingredients:
– One and a half Tbsp. oil
– Three minced garlic cloves
– One chopped small onion
– Two cups crushed tomato
– One Tbsp. Worcestershire sauce
– 1/2 tsp cayenne pepper
– 1/2 tsp cumin
– 1/2 tsp paprika
– One tomato diced
– 1/4 cup of parsley
– Three room temperature eggs
– Chopped parsley
– Feta cheese

Here’s how to make it:
Heat oil over medium heat, add garlic and onions and cook until onions have softened and garlic is fragrant. Add the crushed tomatoes, Worcestershire sauce, cayenne pepper, cumin and paprika. Stir to incorporate. Add dice tomato and cook until sauce has thickened. Using a spoon, create wells for the eggs, crack an egg into each well. Cover and cook for another five to eight minutes, until the egg whites are cooked but the yolk is still a bit runny. Garnish with parsley and feta cheese. Enjoy!

Recipe ~ Bolo de Laranja – Orange Cake

BOLO-NARANJA
Ingredients:
1 cup of freshly squeezed orange juice (juice from 3-4 oranges)
5 eggs
2 cups of flour, sifted
1 tsp of baking powder
2 cups of sugar
1 cup of canola oil

 

Directions:
Preheat oven to 350 degrees.

Squeeze the oranges until you have 1 cup of freshly squeezed orange juice.

Grease a tube pan and lightly coat with flour.

In a bowl, add the baking powder to the flour and blend well with a wooden spoon.

In a separate bowl, with a mixer, beat the egg yolks, sugar and oil until well blended. To this, add the juice, flour and baking powder. Beat ingredients until a smooth batter is formed.

In a another separate bowl, beat the eggs whites until stiff peaks form.

With a spatula, fold the egg whites into the egg yolk / flour mixture until all ingredients are well blended.

Pour the batter into the tube pan and bake for approximately 1 hour or until baked. When cooled remove from tube pan and place on cake plate. Optional: sprinkle some powdered sugar on top.

Celebrate Hanukkah with Vegetable Latkes!

Latkes are a favorite Jewish dish that is a deep fried, traditionally made with potatoes and ground Matzo crackers and topped with sour cream (lots of it, for me!)

For this recipe, I grated zucchini, carrots, parsnips and potatoes, with a little thinly sliced onions and parsley to make a bright and crispy Vegetable Latkes recipe.

This video was filmed during Passover, so you’ll hear me referring to Passover. But Vegetable Latkes are definitely worthy and traditional for Hanukkah as well! And whether or not you celebrate Hanukkah, I promise this is one simple and affordable recipe that you and your family will love.
