2 cups ripe (soft) breadfruit
2 cups flour
2 tbsp sugar
1 tbsp baking powder
2 eggs, slightly beaten
sugar for coating
Mash breadfruit until it is the consistency of pudding.
Combine breadfruit, flour, 2 tbsp sugar, baking powder
and eggs; mix well.
Heat oil in a deep pot.
Form dough into balls and fry until golden brown. Drain
on paper towels; roll in sugar to coat and serve.
