Tiramisu Cupcakes
These cupcakes are absolutely, insanely delicious and really taste just like tiramisu! I was wondering how much the authentic flavor would come through, but it totally does. The vanilla bean cakes are brushed over and over, and over, with an espresso and marsala wine mixture so that it soaks through the cupcake. Then they’re topped with a mascarpone cheese frosting and dusted with cocoa powder.

You feel confused, vulnerable and full of doubts. However, all is not as it seems. Feel the fear and do it anyway, because all will turn out well. Expect the new and unexpected to show up and welcome it into your life.  Your turbulent emotions are muddying the waters so step back and try to find clarity of mind, no matter how difficult this proves to be. Things may seem tough or confusing but stick with it, it’s right for you.  At this time, you desire comfort, security and happiness and may well need some emotional support and reassurance.  Things will turn out fine, just know that you are loved and that there are people around you who care.  You are afraid of making the wrong decisions. There is a warning here that foolhardy, impetuous actions could lead to major problems.  Perhaps you feel that you don’t have control over a situation, either personal or professional. You may feel unable to complete a task or stay in a current relationship and fear the consequences of your decisions. Perhaps you know deep down that what you want isn’t really such a good thing.  Deep down, however, you are Brave heart!  Your self-confidence and courageous spirit is unstoppable at the moment.  Be patient and compassionate, self-disciplined and strong and you will reap great rewards for your courage.  Insecurity is a devil that taunts us, but only if we listen to that ‘doubting Thomas’ we all have in our heads.  Ignore it.  What do your instincts tell you? Well you could always go against your intuition – but we all know what that leads to, don’t we!  You are about to undergo a period of dramatic change and upheaval – however this period of change will herald a new beginning.  It is time to re-evaluate. Sometimes, as difficult as the disappointment has been to take, change can create new possibilities you never dreamed of.  There could be problems relating to your property, or if considering a new property or move, progress will be thwarted.

Tarot Contemplation – Four of Pentacles

You are hanging on too tightly to material things and people … what do you fear that is making you feel insecure and unprotected?  Being anxious and grasping will not bring you the security you seek.  If you love something, then you must let it go … and if it’s meant to be, then it will return to you.  Remember that saying?  Today, it applies to your present situation.  Are you too comfy in your job and that paycheck, even though what you’re doing no longer stimulates you and you feel dull?  Are you feeling unfulfilled in your relationship after all?  To be clingy is unhealthy, and this includes hanging onto old hurts and grudges.  What steps are you willing to take to change your present situation so that you are in growth mode again and without harming anyone in the process?  Make the time to meditate on these situations today because, as Buddha teaches us, non-attachment is freedom.  Change is actually the only constant in life … and change is inevitable:  struggle is an option.  Start your inquiry there.

Mom’s Recipe – Pinakbet (Bitter Melon Stew)

RECIPE: PINAKBET (Bitter Melon Stew)

A few friends who are diabetic were asking me how to eat bitter melon because they heard that bitter melon (we call it “ampalaya”) is a natural insulin … that is, it lowers blood glucose and A1c levels immediately upon consumption. Trouble is, these folks barely knew about bitter melon, let alone ever tasted or cooked with it. So, I shared Mom’s recipe, which my Dad dearly loved.

First, take a trip to the Asian food aisle or the local Asian Market, like Ranch 99, Island Pacific or Seafood City, and pick up a couple of ampalaya, one bunch of Chinese Yard-Long Beans, a small Kambocha squash, a pound of pork shoulder and a small bottle each of Fish sauce (Filipinos call this amber-colored condiment “Patis” and it is also widely used in Thai and Vietnamese cooking) and shrimp paste (we call it Bagoong). An additional veggie you might want to add is Chinese eggplant.  An additional ingredient you might want to add is half-pound fresh shrimp.  These are ingredients that are integral to Filipino and Southeast Asian cooking, so enjoy the experience!

Over medium heat, saute in 1 TB coconut oil 1/2 chopped medium-sized onion, 1 large tomato (the more tomato, the less bitter the dish becomes), 2 cloves minced garlic and saute’ until the onion is transparent. Then, add small cut-up chunks of pork and saute’ until meat is tender and just cooked through. Season with 1 tsp. of Fish Sauce. Stir in Chinese long beans snapped in 2″ pieces, Kambocha squash (peeled and cut into 1″ chunks), shrimp, eggplant and 1 TB of shrimp paste with 1/2 to 3/4 cup water. Put the lid on the pot and simmer for 20 minutes. Open the lid and add 1/2 cup of bitter melon cut into 1″ pieces (remove the seeds) on top of the stew, then close the lid and allow the veggies to steam and gently cook into this stew for about 5 minutes. Uncover and gently incorporate the bitter melon pieces into the stew and cook for another 5-10 minutes. Don’t overcook, or your dish will become too bitter. (This is the secret to making the dish tasty, but not overly bitter … lots of tomato and cooking the bitter melon on top and mixing it in towards the end of the cooking time.) Serve with hot Jasmine rice. This is a very popular aromatic dish in the Philippines. Enjoy!
