Mint Chocolate Chip Shamrock Mini Cakes

Mint chocolate chip cake is made from white cake mix, mint extract, and grated semi sweet chocolate. Mix the cake batter according to the directions on the box add mint extract and the grated chocolate just before pouring baking pans.  A few drops of green food coloring is optional.

I have collected many baking mold pans over the years.  This make holidays fun. It only takes a cake mix and some sprinkles to make the occasion special.  This pan makes 6 of these shamrock mini cakes.  It is an Wilton aluminum pan that doesn’t have nonstick coating on it.  I found it at a thrift store about 25 years ago and there is a 1983 date stamped on it .  I can usually get about 12 cakes from a cake mix with this pan.

Elder is such a beautiful plant and so versatile as medicine. Sambucus nigra, is a large shrub that grows to between 5-10 feet and in the spring has lovely white flowers that grow in clusters at the end of branches. Each of these flowers turns into a little berry which can be used as medicine as well. When wildcrafting, birds usually get to the berries before us so if you want to get the berries tie a little cheese cloth around the flower clusters before they go to fruit to try to keep out some birds.

Fast Food Friday – Amelia’s Awesome Graham Cracker Pie Crust

Some people like to buy pre-made graham cracker pie crust but this recipe from Amelia is so good and so easy to make that, once you’ve had it, you’ll never buy pre-made again.  This has been my go-to recipe for years and there is never a shortage of compliments on how good it is.

Just a little warning – don’t sample the crust before it makes it into the pan because you will end up eating the whole crust with a spoon.

Amelia’s Awesome Graham Cracker Pie Crust

1 1/4 cups (1 1/2 packages or 27 squares) graham crackers
3 Tablespoons sugar
6 Tablespoons melted buter

Full Moon blessings to all! Today is the first of two Full Moons this month (welcome to March, by the way), this one being in the sign of Virgo. Considering that Full Moons themselves represent cycles, culminations, and especially letting go, this seems to be the perfect card for this time. Our actions and choices have consequences, and the blame can not be placed upon another, rather, it lies within our ability to choose and understand cause and effect.

In some ways, I feel as though this could go both ways today.
