This is an exotic delicious main dish or it can be used as a side dish. Just the smell of Aloo Dum can make you hungry!  To make this dish, potatoes are fried and then soaked in the spicy aromatic gravy. This is a perfect dish for any dinner party.

Ingredients
  1. 4 medium size potatoes
  2. 2 tablespoons oil
  3. 1 teaspoon cumin seed
  4. ⅛ teaspoon asafoetida
  5. 1 tablespoon besan (chickpea flour)
  6. 6 whole red chillies
  7. ¼ cup yoghurt
  8. 1 tablespoon sesame seeds
  9. 1 tablespoon desiccated coconut
  10. ½ cm knob fresh ginger
  11. 1 green chilli, or adjust to taste
  12. 1 tablespoon ground coriander
  13. 1 tablespoon fennel seed
  14. ½ teaspoon turmeric
  15. ½ teaspoon red chilli powder, or to taste
  16. ½ teaspoon paprika
  17. 1 teaspoon salt, or to taste
  18. ½ teaspoon garam masala
  19. about 2 tablespoons chopped coriander
  20. oil to fry
Instructions
  1. Peeled and cut the potatoes into 1 cm cubes.
  2. Heat the oil in a frying pan over medium high heat. Frying pan should have at least 2 cm of oil. To check if the oil is ready, put one piece of potato in the oil. The potato should sizzle right away. If potatoes are fried on low heat they will be very oily.
  3. Fry the potatoes till they are cooked through; turn the potatoes few times while frying. Take out potatoes with a slotted spoon (this allows excess oil to drip back into the frying pan) and place on a paper towel. Keep aside.
  4. Heat the pan on medium heat and stir-fry the sesame seeds for about a minute until seeds lightly change colour. Take them out and keep aside.
  5. Blend sesame seeds, coconut, ginger, green chilli, and mix it into a paste. Use water as needed to blend into paste.
  6. In a small bowl mix, sesame paste, yoghurt, ginger, green chilli, ground coriander, fennel seed, paprika, red chilli powder, and turmeric into a paste. Keep aside.
  7. Heat the oil in a saucepan. Test the heat by adding one cumin seed to the oil; if seed cracks right away oil is ready.
  8. Add the asafoetida and cumin seeds. After the cumin seeds crack, add whole red chilli and besan (gram flour). Stir-fry for about half a minute until the besan is golden-brown.
  9. Add the spice paste and stir-fry for about 2 minutes on medium heat until the spices starts to separate from the oil.

Banana-Ketchup

Banana ketchup or banana sauce (Mafran or Jufran Sauce) is a popular Philippine condiment made from mashed banana, sugar, vinegar, and spices. Its natural colour is brownish, so it is often dyed red to resemble tomato sauce. Banana ketchup was made when there was a shortage of tomato sauce during World War II, due to lack of tomatoes and a comparatively high production of bananas.

FLAVOUR AND USE

Banana ketchup is sweeter than tomato sauce and is similar in taste to the Indonesian Kecap Manis and the Thai Sweet Chilli Sauce. In Filipino households, this ubiquitous condiment is used on just about any dish – omelettes (torta), hot dogs, burgers, fries, fish and other meats. Banana ketchup is also a vital and distinct ingredient inFilipino-style Spaghetti (sweeter than the traditional Italian spaghetti).

It is exported to countries where there is a considerable Filipino population (United States, Canada, United Kingdom, Saudi Arabia, Kuwait, Hong Kong, France, Switzerland, Australia and New Zealand).

Ingredients
  • ½ cup golden raisins
  • ⅓ cup chopped sweet onions
  • 2 large garlic cloves, quartered
  • ⅓ cup tomato paste
  • 4 large very ripe bananas, peeled and sliced
  • 1⅓ cup cider vinegar, divided use
  • 3 – 4 cups water
  • ½ cup (packed) brown sugar
  • 1½ teaspoons salt
  • ½ teaspoon ground chilli pepper, or to taste
  • ¼ cup corn syrup
  • 2 teaspoons ground allspice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ¼ teaspoon ground cloves
  • 2 tablespoons dark rum
Instructions
  • 1
    Place the raisins, onions, garlic, tomato paste, bananas, and ⅔ cup vinegar in the bowl of a food processor fitted with the metal blade. Process until smooth and pour into a large, heavy saucepan.

    To the banana mixture in the saucepan, add remaining ⅔ cup vinegar, 3 cups water, brown sugar, salt, and ground chilli pepper. Stir to combine.

    Bring mixture to a boil over medium-high heat, stirring often. Reduce heat to low and cook uncovered, stirring the ketchup occasionally, for 1 hour and 15 minutes. If the sauce gets too thick and begins to stick, add some of the remaining water (up to 1 cup).

    Add corn syrup, allspice, cinnamon, nutmeg, and cloves. Cook over medium-low heat, stirring often, for another 15 minutes or until it is thick enough to coat a metal spoon. Stir in the rum and remove from heat. Let cool for 10 minutes.

    Push ketchup through a fine strainer, mashing the solids with the back of a spoon. Let cool to room temperature, pour into glass bottles, cover, and refrigerate. Use within 1 month. Banana ketchup is especially good as a condiment with pork and poultry.

1/2 teaspoon vanilla.
1 1/2 cups flour.
2 teaspoons dried lavender, divided.
2 teaspoons baking powder.

* Directions:

1. Cream butter & sugar.
2. Add eggs & vanilla.
3. Ground 1 teaspoon of lavendar. Add with other teaspoon of whole flowers to butter mixture.
4. Stir in flour & baking powder until well blended.

Don’t eat Dungeness crab, California health department warns – SFGate

The California Department of Public Health is warning that potentially deadly levels of domoic acid have been found in Dungeness crab and rock crab caught along the coastline between Oregon and the southern border of Santa Barbara County. “Delaying or closing the season is disappointing,” said Craig Shuman, marine regional manager of the state Department of Fish and Wildlife, which sets the dates for the season. On the mild side, toxic crabs can cause vomiting, diarrhea, abdominal cramps and headache, according to public health officials who say the symptoms can persist for days. Short of that, the poisoning can also lead to permanent short-term memory loss, coma, seizures and other symptoms. The 600-boat commercial crabbing season is scheduled to begin Nov. 15, and crabbers have been pouring into the Bay Area from Alaska, Oregon and Washington hoping to earn half their annual income. “It’s going to be devastating” for the crabbers whose livelihood depends on this crucial time of the year, said Mike Dvorak, captain of the High Seas, a vessel big enough to collect 20,000 pounds of varied seafood in a single haul. Boat owners believe this summer’s warmer coastal water — 60-plus degrees on average, instead of the typical 54 degrees — is behind the toxic bloom. Health officials say symptoms of poisoning can appear up to 24 hours after someone has eaten toxic seafood, though no illnesses have been reported.
