Coffee (Coffea arabica, Rubiaceae) beans are used in many cultures across the globe to brew the popular caffeinated beverage. Caffeine and coffee have been linked with reduced incidence of metabolic syndrome and diabetes, lower serum triglycerides, better athletic performance, and improved memory and attention. Other than caffeine, antioxidant compounds such as chlorogenic acids (CGA) may underlie coffee’s benefits, as some studies report similar results for decaffeinated coffee. Among coffee CGAs, 5-CQA comprises about 35% of CGAs in roasted coffee and 56-62% in green coffee beans. One serving of coffee provides 20-675 mg CGAs, depending on the type of roast, preparation, serving size, and many other factors.

Or, maybe you do like cabbage but your family constantly tells you they hate it. And they probably do. At least the boil-until-all-integrity-is-gone variety that most people serve up this time of year. This recipe is a real crowd pleaser and will have your family chuffing down cabbage way past St. Patty’s Day.

IMG_3975Vanishing Oven Roasted Lemon Garlic Herb Cabbage
One large head of cabbage (any color)
Olive Oil
6 cloves garlic, minced
zest of one lemon
leaves from several sprigs of fresh thyme
leaves from 2 sprigs fresh rosemary
Kosher salt
black pepper
¼ cup freshly grated parmesan cheese

Preheat oven to 425 degrees.

Cut cabbage into 1 inch slices. Quarter the slices, trying to keep them in-tact as best you can. Transfer slices to a colander (again trying to keep roughly in-tact). Rinse. Let air dry several minutes.

As winter presses on, I found myself out of scratch made marinara sauce, so I reached for a can to make up for the loss.  I couldn’t even eat the sauce from the can.  What have I been eating my whole life!?!  I’d only been on the fresh made stuff for about two years.  I didn’t realize how different fresh vs. canned is.  Luckily, my local Cardenas market had a screaming deal on romas.  Not fresh picked from the field like I had in October, but I’ll take it.  I hope you like this sauce as much as I do.

Nothing says “fun” quite as well as homemade marshmallows. These fluffy treats are easy to make, and a hit with kids both big and small. And, if you’re a s’mores lover, homemade marshmallows yield sort of a crème brulee texture when toasted.

3 packages Knox unflavored gelatin
12 oz. granulated sugar
1 cup light corn syrup
¼ teaspoon Kosher salt
1 cup water, divided (use bottled water if your tap water is poor quality)
Confectioners’ sugar for dusting (warning: there is a lot of dusting)

Using a paper towel dipped in vegetable oil, lightly oil the inside of a 9×13 Pyrex pan and dust well with confectioners’ sugar on all sides. Set aside.
