Lemon and Thyme Asparagus Soup

It’s asparagus season!  Celebrate local and fresh ingredients with this guilt-free, awesome soup!  While this recipe is vegan, you could certainly add a little cream for that extra something special

Lemon and Thyme Asparagus Soup

¼ cup olive oil
2 ½ pounds fresh asparagus, woody ends removed and chopped into 1” pieces
4 Celery stalks, cut into 1” pieces
2 onions, diced
16 cups vegetable stock
6 cloves garlic, minced
1 tablespoon dried parsley
2 teaspoons dried, crumbled sage
2 teaspoons dried thyme
3 bay leaves
zest and juice of one lemon
4 cups spinach (stems removed)
salt and pepper to taste

In a large stockpot, heat olive oil over medium heat, stir in asparagus, celery and onion.  Sprinkle with a little salt and pepper.  Continue cooking until onions turn translucent.

The word itself can be broken down into the component parts of “Rei” (pronounced ‘ray’) and “Ki” (pronounced ‘key’).

The Japanese language has many different levels of meaning within it. Some levels are very basic while others are highly esoteric. “Rei” literally means spirit, ghost, soul, in the heavens or of spirits; but also denotes universal energy. “Ki” also means spirit and, some argue, is essentially the Japanese equivalent of the Chinese description of “Chi”, which means life force energy. The word Reiki, therefore, can be taken to refer to a balanced universal life force energy.

Because of its unique qualities Reiki seems to have a basic consciousness which, when used for healing, is able to provide exactly what is needed on all levels.

Meeting people when you’re an introvert is hard. Being introverted doesn’t necessarily mean that you’re socially awkward but rather than you have a limited amount of energy to use on social interactions. Even small interactions like answering an email or saying hi to the neighbor as you walk to your door can be tiring. Talking to clerks at the store or going out to run errands in general can be exhausting. When you run out of energy to socialize, you need to recuperate. Alone time, even if you’re not actually alone physically, to rest your mind and nerves.

Or, at least, that’s how it is for me. I’m a hermit and quite happily an introvert.

Anyway, being introverted means that you’re probably not visiting crowded places often so you’re not likely to meet new people as often. This makes it hard, especially as an adult, to make new friends or…

Roasted Cauliflower Soup

This simple and amazingly delicious soup incorporates roasted cauliflower, roasted carrots, roasted garlic and homemade vegetable stock.

To make your own vegetable stock, fill a pot with about 50 ounces of water. Clean and cut 2-3 large carrots, 2-3 ribs of celery, 1/4 of a large onion, then add to pot with 2 teaspoons of whole peppercorns and 2 teaspoons kosher salt. Boil just until carrots are tender. Strain off solids and you’ve made your own homemade vegetable stock. You can use all sorts of veggies in this, whatever flavor profile your soup desires!

Ingredients:
2 heads cauliflower
6-8 medium carrots
1/2 medium onion, diced
10 large garlic cloves
About 50 oz vegetable stock
Salt
Pepper
Optional: 1/4 cup heavy cream, heated (you can skip this and keep it vegan, still a delicious soup)

The Mythical Kickstarter will be launching on March 3, at the Northwest Tarot Symposium, in Portland, Oregon. Grandmaster Lana’s Hawaiian Bread Pudding

 

Ingredients:

1 Hawaiian Portuguese Sweet Bread loaf, cut into 1” cubes
2 eggs (or use equivalent in Egg Substitute)
2 cups Coconut Milk
1 cup Soy Milk
2 TB Bourbon Vanilla (I make my own with Vanilla Beans)
½ tsp. Himalyan Sea Salt
1 tsp. Ground Cinnamon
3 TB melted butter (or equivalent margarine/veg. oil substitute)
1 large apple, diced into small cubes
1/3 cup raisins
¼ cup dried cranberries
¼ cup crushed nuts
¾ cup brown sugar, packed

 

Directions:

Add the dry ingredients together. Mix the apple and raisins in another bowl. Melt the butter, don’t make it hot. Add the beaten eggs (or Egg substitute) with the milk, then incorporate with the dry ingredients. Slowly incorporate the milk mixture with the bread cubes, but use just enough to get the cubes covered. Stir in the cranberries and nuts. Put the bread mix into a 13×9″ greased pan. Add the apple/raisin mix on top of the bread and pour the rest of the milk/butter liquid over everything.

Bake uncovered at 350º F. for 40-45 minutes (depending on how hot your oven gets).

Optional:  Top with coconut cream or Vanilla Brown Sugar syrup
