Amelia’s Fried Rice Sauce

Oh fried rice, how I love you. Seriously, fried rice is such an awesome comfort food. It also is a fast, cheap and easy way to repurpose leftovers! But you can’t have good fried rice without a good sauce. This is a sauce Amelia developed years ago. It’s crazy good! I use the sauce to make fried rice but my niece Julia loves to put it on plain white rice. I like to make this sauce by the gallon and store it in the freezer in 8 oz. deli containers for a really easy leftovers-meets-rice dinner. Here is the sauce recipe. Instructions on frying rice follows.
Amelia’s Fried Rice Sauce
1 1/5 part soy sauce
2 parts pineapple juice
1 part brown sugar
freshly minced garlic (to taste – I like lots)
freshly grated ginger (again, to taste)
splash of vinegar (I like to use rice wine vinegar)
Mix all…

Uncle Dave’s Café, Port Orchard, Washington

Have you had the “best biscuits and gravy anywhere”? If you haven’t, you need to check out Uncle Dave’s Café. A Port Orchard tradition for over 26 years, Uncle Dave’s cranks out 200-300 meals a day to hungry patrons who come from long distances, just for the awesome biscuits and gravy. With sit down booths, a conversation counter and some of the friendliest staff around (some having been there over 20 years), it’s no wonder people flock to Dave’s!

CPM had the opportunity to sit down with the new owners Of Uncle Dave’s Café (our brother and sister-in-law), Anthony and Cameron Cutler. “The timing was just right and Dave [the original owner of Uncle Dave’s] was selling,” says Cameron. “Dave’s has been around for a long time and already has a loyal following.” So loyal, in fact, that, even as we sat there while the café was closed, people were…

Foodstyles | Magnolia Table Chocolate Chip Cookies, by Joanna Gaines

“My dad has an intense sweet tooth, just like me. One afternoon when I was around 10 years old, Dad got a hankering and he enlisted me to help him make Toll House chocolate chip cookies. That was the first time he and I had ever baked together. Since then, whenever I make chocolate chip cookies, including the ones from this recipe, I think of him and that special afternoon we spent together in the kitchen.“

Celtic Foodstyles | Traditional Scottish Tablet

HP David Crawford remembers his mother, Elizabeth Harrison Crawford, making good old Scottish Tablet, which was always a great surprise to find a tray like this waiting for him and his siblings upon arriving home feom school. 😀
Ingredients:
1 Tin of Condensed Milk
2lb of sugar
large knob of butter
1 cup of milk
Optional: Vanilla or Whisky can be added towards the end
You will also need:
Baking Tray, lightly greased with butter
Heavy bottom pan
Hand Whisk/Wooden spoon
Directions:
Add the sugar, milk & butter to the pan, heat slowly until it all comes together and butter melts. Then add the tin of condensed milk and bring the heat up slowly until mixture is boiling (Take care as it can get very very hot!! and does blister if you get splattered – believe it 🙂 !!)
Once mix is boiling turn down but keep mix on a steady “bubble” stirring constantly (I use a whisk as I have arthritis in my hands and find that easier than using wooden spoon, but you will find your own comfortable way of doing it!) It usually takes about 15-20 minutes and the mix will turn a golden brown colour, and when it starts to feel grainy against the side of the pan it’s ready to pour into the baking tray.

Leave to cool for around 10 minutes and then use a heavy sharp knife to cut through the mix into the required size you want. Leave to cool thoroughly and cut through the mix again to separate fully.
Eat and enjoy! Its 100% better than the shop bought stuff.
